 There is a small tube that runs into the cold area of the evaporative coil. The "probe" end of the thermostat is inserted into this tube. Insert about 6" to 12"  The evap coil is shown with its cover off. Usually I just work by feel through the control hole in the end of the cover. There is nothing sharp to hurt you.  The black dial that fits on the temperature control is labeled 1 to 9. I set it halfway- at 5- and adjust from there. When the cooler gets as cold as I want (usually 32) I use my very tiny jewelers scredriver to turn the "cut out" screw warmer until the main motor turns off.
